Menu Monday 5/15/17

We had a very busy week last week with my mother’s first visit to UAMS to see a cardiologist on Monday, my sister’s visit, Presley’s soccer team playing in the semi-finals on Tuesday and then advancing to win the championship in her U12 soccer league on Saturday, and of course, Mother’s Day on Sunday.  Hopefully this week is a little less eventful.  This is the last week of school for the girls and they are already lobbying not to have to go to school on the last day.  I haven’t made up my mind yet.  We’ll have to wait and see.

Monday:  Jamaican Macaroni and a tossed salad.  My other favorite cookbook is called Desperation Dinners and is full of home-cooked meals that can be prepared in about 30 minutes.  The authors had a newspaper column of the same name and now one of them has a website ( and blog dedicated to these quick delicious meals.  This recipe is ground beef, macaroni, carrots, onion, bell pepper cooked in a sauce of diced tomatoes, Worcestershire sauce, salt, pepper, garlic, and hot sauce.  I add celery and frozen corn so it really is a one-dish meal.

Tuesday:  Chef salad with all the toppings.  We roasted a turkey breast on Saturday and still have a little left over so we’ll top romaine and baby kale with carrots, cucumbers, mushrooms, red onion, boiled eggs, turkey, and cheese.  Add croutons and your favorite salad dressing and dinner is served.

Wednesday:  Sloppy Janes, oil and vinegar slaw, and tater tots,  Another favorite recipe from Desperation Dinners, it is their version of the traditional Sloppy Joe and is so quick and easy to make you’ll be asking yourself why you’ve been buying that canned stuff all these years.





Thursday:  Turkey and wild rice soupYou guessed it, I’m going to take the turkey bones and make another delicious soup!  I’ll let you know how it goes.

Friday:  Wahoo’s fish bowls.  We are unlucky not to have a Wahoo’s Restaurant near us, but every time we visit family in Colorado we have to eat there at least once.  Their fish bowls are one of our favorite items (as well as their fish tacos).  It’s a simple recipe of white or brown rice topped with black beans, your choice of fish, and pico de gallo.  What could be easier than that?
