Menu Monday 5/1/17

I can’t believe that it’s already May! The girls are into their final three weeks of school and then they’re out for the summer. We have a few fun holidays to celebrate this week and as you well know, my favorite way to celebrate is with food. Don’t forget that this Saturday is the 143rd running of the Kentucky Derby.  Mix yourself up a mint julep and tune in to NBC to enjoy the hats, horses, and of course the roses. Post time is 6:34pm ET.  Here’s a list of the horses so you can pick your contender.

Monday: Pan-fried Tilapia, couscous, and broccoli. Season, fish with your favorite seafood seasoning and quickly pan-fry in a hot skillet. Couscous cooked in chicken broth and oven roasted broccoli round out the meal. I may add a quick pickled vegetable or salad to the meal.

Tuesday: Spaghetti Carbonara, salad, and Dave’s famous garlic bread. It’s Bacon and Egg Spaghetti Day! I think a nice Italian vinaigrette (just add Italian seasoning and Parmesan cheese to your favorite oil & vinegar dressing recipe) will make a great dressing for today’s salad. And of course there will be garlic bread.

Wednesday: Grilled chicken, corn on the cob, and baby green beans. I have some bone-in (with skin) chicken breasts to throw on the grill, seasoned liberally with my chicken seasoning (seasoned salt, garlic, black pepper, Italian herb mix, paprika, and cayenne). Make sure you let that chicken skin get nice and crispy, it’s the best part! Fresh corn on the cob, boiled for 5 minutes, then rolled in real butter (no salt) and steamed baby green beans tossed with olive oil and lemon pepper will complete the meal.

Thursday: Today is Star Wars Day, May the Fourth be with you! We always enjoy celebrating this “play on words” with Star Wars themed foods. We’ll be having Han Solo Burgers, Darth Vader tots, and Cuke Skywalker salad this year. Don’t forget your blue milk! I’ll be sure to post some pictures of past celebrations to inspire you.

Friday: Pork Tinga tacos with queso fresca and avocado. Today is Cinco de Mayo, so of course we’re having Mexican food. Rick Bayless has an easy slow-cooker recipe for Tinga Tacos, which combines pork shoulder and potatoes with chipotle in Adobo and tomatoes. It makes sensational tacos! These will taste great on the patio along side a big pitcher of Margartitas.
