Well, tomorrow is Valentine’s Day and for our family that usually means a heart shape themed dinner rather than a romantic night out for my husband and I. It’s pointless for us to plan something like that. We just sit there talking about how one of the kids would love what we ordered or wondering how they are doing without us. So we have a surprise meal planned for the girls and we’ll let you know how it goes.
Monday: White Bean soup and cornbread. I froze the leftover broth from our New Year’s corned beef and it makes the best bean soup. I also have a ham bone in the freezer. Add a bag of Great Northern beans, diced onion and a can of diced tomatoes and soup’s done. Tastes great with cornbread.
Tuesday: Valentine’s Day surprise dinner. All I’m saying is, “Yes, there will be pancakes!”
Wednesday: Deli chicken, fried okra, broccoli, and couscous. Today is grocery-shopping day so I’ll pick up a deli chicken and I’ll only have to prepare some sides. The leftover chicken will provide meals for the next two days.
Thursday: BBQ chicken sandwiches topped with mustard slaw, French fries, and pickled cucumbers. Just shred the leftover chicken from yesterday and mix with your favorite BBQ sauce. Top with shredded cabbage mixed with mayo, mustard, salt, pepper, and a dash of vinegar. Serve with pickled cucumbers or more slaw on the side.
Friday: Fried rice and egg rolls. My family loves fried rice so turn any remaining leftover chicken into dinner. Mince up onion, red bell pepper, broccoli, mushrooms, and chicken. Sauté until tender then season with soy sauce, Worcestershire sauce, garlic powder, salt, and pepper. Add a scrambled egg and leftover rice; heat through. Serve with frozen eggrolls.
