It’s that time again. Time to start another week. Back to school and back to work. Back to after-school music lessons and sports practice and all of our other weekly responsibilities. And time to plan another week’s worth of meals. Hopefully, I can help with that. Here’s what we’re eating this week:
Monday: Bean, beef, and cheese burritos with Mexican rice and shredded lettuce salad. We had tacos this weekend and I’ve got some leftover taco meat so I’ll combine it with sautéed onions and peppers and some pinto beans to make burritos. Cover with enchilada sauce, shredded cheese, and a little sour cream. Shredded lettuce topped with pico de gallo stands in for salad.
Tuesday: Salmon filets, asparagus, roasted potatoes, and tossed salad. We probably don’t eat as much fish as we should, but we try to get it into the rotation as often as we can. This is a family favorite, and the healthy protein combined with doubling down on the veggies makes us feel pretty good about this meal.
Wednesday: Cheeseburgers, French fries, and coleslaw. The girls have been begging for hamburgers so I decided to give in. At least we went healthy yesterday, right?
Thursday: Pork chops with hominy and biscuits. Time to get out the crockpot and let dinner cook itself. Brown some pork chops, place in the crockpot and top with a can of cream of mushroom soup and a can of hominy. When it’s time for dinner just bake some biscuits and dinner is served.
Friday: Chicken Caesar Salad. Decidedly simple, but this is one of my children’s favorites. So why fight it? I prefer grilled chicken but of course the girls want anything fried. No reason to make life difficult, just heat up some frozen chicken strips and toss some lettuce in Caesar salad dressing.
